Marmalade is a quince jam, with a pasty and homogeneous consistency, obtained by boiling the crushed pulp of the fruit with sugar in syrup. It is a specialty of Portuguese regional confectionery, with the famous one from Odivelas (near Lisbon) made in the former monastery by the nuns. In Brazil, marmalade is produced in the Goiás municipalities of Cidade Oeste, Luziânia and in almost all of the center south, it also has a very close relationship with the Brazilian Goiabada.
