O Pastor De S. Romao Buttered Sheep Cheese

Low regular cylindrical shape (plate), with slight bulging on the upper surface, being more pronounced laterally. Thin crust, smooth, well formed, straw yellow color and uniform. Closed briefcase, white or slightly yellow uniform, with few "eyes" and buttery texture. Consistency malleable, allowing some fluctuation (to the touch). Bouquet smooth, clean and slightly acidic.
