These Alicante Bouschet grapes came from a "major" vineyard with approximately 20 years of age, planted in a granite clayish soil. They were carefully harvested by hand and put in 15 Kg boxes. In the winery, they were subject to a rigorous selection and manual destemming, and after a slight crushing of the grapes, they underwent cold maceration for about 48 hours. When they were placed in 1,500 Lt French oak vats, the fermentation started spontaneously and followed its normal kinetics under controlled temperature at 25ºC, with 3 daily treads. The wine's malolactic fermentation occurred in new French oak barrels in which the wine aged for over 36 months. After the ageing step, only the best barrels were used for this batch, which rested in the bottle until it reached the expected balance and complexity.
