S. Romao Buttered Sheep Cheese Merendeira

Regular low cylindrical shape (plate), with slightly bulging on the upper face, being more accentuated laterally. Thin, smooth, well-formed crust, straw yellow and uniform in color. Closed paste, white or slightly yellow in color, uniform, with few “eyes” and buttery texture. Malleable consistency, allowing some fluctuation (to the touch). Smooth, clean and slightly acidic bouquet.
