In 1830 Henriques Gaspar de Paiva arrives in Azeitao with a secret from the Beiras, the original recipe of the Serra Cheese. With it came dairy sheep and every year came a cheesemaker from their homeland , which with the milk of his flock produced the so called Serra da Estrela cheese, not realizing it was creating one of the highly prized national sheep cheeses, the Azeitao Cheese.

Simoes Azeitao DOP is a gourmet hand manufactured cheese with a high quality for a demanding public.
